Carrot cake

Any bakers here? There's a table at work where sometimes there's food rescued from tescos that's about to be binned as on its date, or beyond, whatever. Picked up a bag of carrots Friday night. Don't like them, apart from carrot cake, of course, which is god fodder.
Too busy and knackered to bother yesterday before I went to work, will have a go today or tomorrow. There's a recipe in a book here that calls for honey, but I'm blowed if I'm buying it specially as still got a little from years ago that's gone solid. Think I can cobble something together with what I have in.
Would the honey be important?

No, you can skip the honey, but if you have syrup use that in it's place.
If you do have solid honey, you can soften it up again, just heat it.
Easiest way is to nuke it in the microwave. Just do it in ten second bursts and stir it each time......so long as it's in a jar, not a plastic squeezy thing. If it's in plastic you'll need to dig it out first.
If it's in plastic you can put that into a bowl of hot water though and that'll soften it up and start to make it runny again.

Carrot cake is worth the effort :D

No syrup. Only a little honey in the squeezy plastic thing, be nice to use it up. I must get my arse in to gear.

I would also like a good carrot cake recipe. The local cafe charge 3 quid a wedge for theirs and I cant see them giving me their recipe somehow,

It's the moist tastiness that makes good carrot cake, isn't it ?
I like mine spiced, and if I don't have syrup I just use jam/jelly.

I feel a need to bake....Himself's fed up of gluten free though, so maybe I need to suss out carrot cake buns, or microwave in a big soup mug, type cake.

I'm half way through sanding all the paintwork in the downstairs loo though, so, another mess isn't happening, not just yet.

If you have a big soup mug, one that's safe to use in the microwave then......

1. Finely grate up a small carrot, you only need about three tablespoonsful of grated carrot for a mug cake.

2. Put 3 heaped tablespoonsful of plain flour and a scant half teaspoonful of baking powder.
( or if you have Self Raising just skip the baking powder) into the mug,

3. Add a good pinch of salt. Add a big pinch of cinnamon, or two :)

4. Add two heaped tablespoonsful of sugar, (soft brown is brilliant, but granulated will be fine) Stir well.

5. Add 2 tablespoonsful of vegetable oil and 2 of milk

6. Crack an egg into that, dribble in a little vanilla essence if you like it.

7. Mix really, really well. Make sure the flour is all incorporated into the batter.

8. Add the grated carrots and stir through thoroughly.

9. Add a wee handful of raisins (pick them over first, take off any wee stalks and separate the fruits)

10. Stir really well and put the mug into the microwave on full for a minute. Let it sit for 30 seconds then give it another 30 seconds power.

Run a silicon spatula around the edge and turn out onto a plate.

Very good with cream cheese icing, but also really good with custard :) especially when you're in the notion for cake but cannae be bothered baking, iimmc ?
Or Son2 suddenly asks if there's any pudding.

Mug cakes = very good things :)

Good but a bit dry savoury, presumably as no honey - there was about three drops left - and I forgot the icing. Done some icing but it's too runny to put on, so it's in the fridge to thicken.
